I had never heard of allulose before but I was listening to my friend Peter Attia being interviewed on Jocko Willink’s podcast and the topic came up. It’s a pretty interesting. Apparently allulose is a rare naturally occurring sugar substitute. Peter explains that the chemical structure looks like fructose but with a small exception and that exception makes all the difference to how it affects the body; it is not metabolised by the liver, it is largely excreted by the kidneys and it seems to actually lower blood sugar.
