I’m not sure that anything with chick peas actually qualifies as paleo, but these are a healthy-ish treat all the same. I try to avoid baked goods but sometimes I just need a little treat. These are a pretty good alternative, especially in comparison to the killer avocado brownies I make. I got the idea from my friend Pilates instructor Rachael Holloway. She said she makes a great cookie with chick peas so I thought, a blondie alternative might be worth a go. Sure was! The recipe is super simple so here goes:

Ingredients

1 can organic chickpeas, rinsed and drained
1/4 cup unsalted butter or coconut oil
1/3 cup all natural unsalted almond butter
1/4 cup honey or xylitol equivalent
1/2 tsp cinnamon
1/2 tsp salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Coarse sea salt, for sprinkling

Instructions
1.Set oven to 180C.2.Drain the chick peas then blitz them in a bowl.3.Over low heat, melt butter. Add almond butter and honey to the butter and combine over low heat. Add salt, cinnamon, baking powder, baking soda.4.Add chick peas to the butter mixture and combine. I used my hand blender but don’t over mix.5.Line an 4×8 loaf pan or 8×8 pan with parchment.6.Bake for 16-18 minutes until a toothpick inserted comes out dry and the top is lovely and brown.7.Enjoy!
